We’re so excited to announce the first in our Meet the Maker series at Flight, and we’re kicking things off with something special for the whiskey lovers!

On Thursday 12th November, we’ll be welcoming Copeland Distillery to Flight with a menu heavily influenced by their wonderful malt whiskey range.

Our chefs have created an exclusive four-course menu bringing together the flavours of Copeland whiskey, Otterbank beer and carefully selected Irish produce.

The evening will finish with a guided whiskey tasting hosted by Declan from Flight and Aidan from Copeland Distillery, sharing the stories and craftsmanship behind the spirits.

Ajvar & Black Garlic Spread

A rich, smoky roasted pepper and black garlic spread, served with freshly baked brioche made with Otterbanks Big Tree wheat beer.

Starter

Bluestack Farm Beef Carpaccio

Merchants Quay whiskey-cured and smoked Bluestack Farm beef, served with Cáis na Tíre cheese, bone marrow aioli, pickled shimeji mushrooms and a micro salad, finished with mustard seeds, hops oil and crispy croutons.

Irish BBQ Sugar Pit Pork Chop

Irish BBQ Sugar Pit pork chop served with Copeland 26.2 Peated Malt whiskey and green peppercorn sauce, alongside a kimchi, lentil and apricot cassoulet, black pudding hash browns and kale.
