ABOUT THE CUISINE

Nigerian cuisine reflects the country's incredible cultural diversity, with hundreds of ethnic groups each contributing their own cooking traditions, flavours, and techniques. Food is central to family life, celebrations, and community, with recipes often passed down through generations and shared with pride. While ingredients and dishes vary across Nigeria's regions, every meal is rooted in hospitality, and the joy of bringing people together around the table.

ABOUT THE CHEF

“I’m Bolu and I’m from south-west Nigeria. I’m from a tribe called Yoruba. In Nigeria, Yoruba are one of the three largest tribes in Nigeria. The other two are Igbo and Hausa, but Nigeria has 250 ethnic groups/tribes with many different languages and culinary traditions.

My love for cooking started in my mum and aunt’s kitchen, where I learned that food is about care, culture and bringing people together. Their passion became my passion too. I enjoy blending traditional Nigerian flavours with my own touches to create dishes that feel familiar yet new. My mum and aunt are so impressed and I hope I impress you too!

In Nigeria, we cook with a lot of varieties of protein, using beef, chicken, goat, eggs, nuts and beans. The climate in Nigeria helps the farmers to grow many leafy vegetables, yam, sweet potatoes, plantain and cocoa. I can’t wait to share all of these wonderful ingredients with you in my class.

When I’m not in the kitchen, you’ll find me on the football pitch or in my dance class. I also love listening to music while cooking; it gives me inspiration and motivation. All that keeps me disciplined, focused and balanced. My goal is to honour my roots and inspire others through every plate I create and serve.”

THE CLASS FORMAT

Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.

While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
