Main courses BBQ Swannington pork fillet, squash purée, grilled cabbage, burnt apple and jus. Pan-roasted North Sea hake, cauliflower purée, spinach and cockle beurre blanc. King oyster mushroom pithivier, caramelised leek, mustard purée and red wine sauce. 28-day rump picanha steak with mushroom duxelle, chimichurri and fries – £10 supplement. Desserts 70% dark chocolate delice, Amarena cherries and vanilla Chantilly. Braeburn apple tarte Tatin with cardamom ice cream. Whipped vanilla mascarpone, roasted orchard fruits and pear sorbet.
