We are getting back into the kitchen for our next Curd Nerd gathering, where we will be focusing entirely on the craft of making fresh mozzarella. If you have ever been intimidated by the stretching process or just want to get better at achieving that perfect, silky texture, this session is for you. We will walk through the science of the curd, the importance of water temperature, and the physical technique required to shape those classic balls of cheese. This is a hands-on session designed for anyone interested in cheesemaking, whether you are a complete beginner or someone who has experimented with a kit or two at home. We will have all the equipment and milk ready for everyone to have a go, and we will finish the session by sampling our creations together with some good bread and olive oil.
