Mexican cuisine is a bold celebration of flavour, colour, and culture, famous for its vibrant use of corn, beans, chillies, and fresh toppings shaped by centuries of regional traditions and Spanish influence. In this hands‑on, fun‑filled workshop, we’ll explore authentic Mexican food and create a feast designed for sharing. Along the way, we’ll take a moment to celebrate Candelmas (Día de la Candelaria) a joyful Mexican festival held every February, where families gather to make and enjoy tamales, one of Mexico’s most beloved traditional dishes. Once the cooking is done, we’ll sit down to enjoy our creations, swap tips, and explore the incredible flavours that make Mexican food so unforgettable. On the menu Quesadillas – golden‑fried tortillas stuffed with beans, sweet potato, and cheese Nachos – crispy tortilla chips loaded with jalapeños, salsa, sour cream, and cheese Tacos – soft corn tortillas filled with spicy chilli and fresh salsa Tostadas – crunchy tortillas topped with refried beans and creamy guacamole Esquites – sweetcorn ribs with a smoky chipotle kick Tamales – a Candelmas‑inspired treat: soft masa parcels steamed in corn husks Spiced chocolate brownies – rich, fudgy, and with a hint of heat All recipes are vegetarian‑friendly and easy to adapt to your taste. The Lang Spoon Community Kitchen The Lang Spoon Community Kitchen is part of Greener Kirkcaldy’s Community building. We’re based in the heart of Kirkcaldy, close to the High Street and the train and bus station. Find out how to get here . Our purpose built training kitchen has eight workstations, replicating the ease and comfort of cooking at home. Our cookery school is complemented by a productive and climate-friendly garden, where we run volunteer training sessions and grow seasonal herbs, fruit and vegetables to use in our classes and events. We also have a larger community training garden and orchard in Dysart. We host a wide range of events, courses and workshops on all aspects of food and drink. Both our Community Training Kitchen and Production Kitchen are available for hire too.
