The aim of this workshop is for participants to learn how to create a Nukadoko and be confident to make Nukazuke at home.
The aim of this workshop is for participants to learn how to make Nukazuke (Japanese fermented pickles) and how to feel confident to make them at home – a brilliant use of leftover veggies!
The Edinburgh Fermentarium (https://www.facebook.com/EdinburghFermentarium/) founder, Ruth Munro, will introduce participants to the delicious and nutritious world of fermented vegetables. This technique has been used for centuries in Japan – and the result is a tangy treat that not only packs a punch in the flavour department but is full of health-promoting nutrients and bacteria.
"This is a relatively new process for me. I learned all about it on my trip to Japan last year. I'm currently obsessed with it. The vegetables transform within only 24 hours. It's really amazing"
Ruth
Participants will make their own Nukadoko (fermented rice or wheat bran bed) to take home and ferment Nukazuke Pickles. Nukadoko are often passed down through generations and traditional manufacturers maintain and use them for over 300 years.
We will also make a small jar of Misozuke.
Towards the end of the class we will enjoy a small japanese style meal with lots of ferments and pickles
