GLASGOW, UK | Forbes 30 Under 30 chef and recipe developer Lungi Mhlanga, founder of Lungi’s Always Baking, is bringing her viral Toast Cookie Series to Glasgow for the first time ever, with a four-day pop-up at The Pyramid at Anderston from 29 October to 1 November 2026. The destination bakery pop-up will bring Lungi’s signature oversized cookies and desserts to Scotland, including the Toast Cookie creations that have taken social media by storm, generating more than 15 million views and thousands of social media impressions. THE TOAST COOKIE SERIES THAT BROKE THE INTERNET What started as a creative baking experiment has become one of Lungi’s most recognisable food concepts. Lungi’s Toast Cookie Series takes the flavours and textures of much-loved toast dishes and completely reimagines them as indulgent cookies. The series has resonated with millions online because of its combination of nostalgia, creativity and transforming familiar breakfast and snack combinations into something entirely unexpected. The Jam & Buttered Toast Cookie, one of the original creations from the series, has become particularly iconic, inspiring bakeries around the world to recreate their own versions, with recreations appearing as far afield as Sydney, Bali, Mexico City and Amsterdam. Now, for the first time, Glasgow gets to experience the Toast Cookie Series in person. As always, everything on the menu is 100% vegetarian and halal.
