As the seasons begin to shift, join chef Helen Graham for a masterclass exploring the art of preserving ingredients for the months ahead

Perhaps best known as the former Executive Chef of the celebrated Middle Eastern-inspired restaurant Bubala, Helen has built a reputation for creating vibrant, vegetable-led dishes influenced by Middle Eastern and Jewish food traditions. Following more than a decade in some of London's most respected kitchens, including Ottolenghi, The Palomar and The Barbary, she has become one of the UK's most distinctive voices in modern vegetable cooking. Her acclaimed cookbook Centrepiece, published earlier this year, now helps home cooks elevate their own vegetable dishes with confidence and creativity.

Part of the Food & Drink Studio's autumn 'Preservation' season, this event celebrates the timeless practice of carrying one season into the next. As late-summer produce reaches its peak, Helen will demonstrate how to transform the harvest bounty into flavour-packed condiments that will be invaluable over the winter months when fresh ingredients are more limited. Guests will be given the opportunity to create four flavour-packed essentials – including fragrant preserved lemons to silky confit garlic – and take them home to enjoy.

Before heading off, guests will be treated to a variety of small plates showcasing the power of preserved ingredients in transforming even the simplest of dishes.
