As part of The Radical Discussion Weekend, organised by Brighton Food Story and Gilly Smith, Laura Karall and Amaryllis Therminot come together for a special seasonal supper club in collaboration with FareShare Sussex.

This is more than a four-course dinner.

Laura has been creating seasonal supper clubs since 2022, and in 2024 began a series of fundraising supper clubs in support of FareShare Sussex. Her cooking is rooted in the belief that following the seasons means following the natural rhythm of the land — cooking with what is available, celebrating ingredients at their best, and finding value in produce that is often overlooked.

Amaryllis has spent years volunteering across Brighton and, for the past two years, has been cooking every Monday as part of The Choir with No Name, a charity supporting people affected by homelessness and marginalisation through singing, food and community.

Now they reunite around a shared question:

What does a healthy local food culture actually look like?

We often talk about food waste as a problem of surplus — food that needs to be rescued, redistributed or prevented from being thrown away.

But perhaps there is a bigger conversation.

What if we looked at food through the whole journey — from soil and season, to kitchen and table, to community?

How does eating seasonally change the way we value food?

What does “local food” really mean?

Can food be both a source of nourishment and a way of bringing people together?

And how can surplus become not simply something we need to redistribute, but an opportunity to rethink how our food system works and who it serves?

Through the evening, we'll explore some of these questions alongside FareShare Sussex, connecting the food on our plates with the people, producers, communities and systems behind it.

Expect a relaxed evening around the table, good food, conversation and a four-course seasonal menu inspired by what Sussex has to offer at the beginning of autumn.
