The aim of this workshop is for participants to learn how to make Nukazuke (Japanese fermented pickles) and how to feel confident to make them at home – a brilliant use of leftover veggies!
The Edinburgh Fermentarium founder, Ruth Munro, will introduce participants to the delicious and nutritious world of fermented vegetables. This technique has been used for centuries in Japan – and the result is a tangy treat that not only packs a punch in the flavour department but is full of health-promoting nutrients and bacteria.

Participants will make their own Nukadoko (fermented rice or wheat bran bed) to take home and ferment Nukazuke Pickles. Nukadoko are often passed down through generations and traditional manufacturers maintain and use them for over 300 years.
We will also make a small jar of Misozuke.
Towards the end of the class we will enjoy a small japanese style meal with lots of ferments and pickles
Cancellations?
You can cancel your ticket for any reason with a full refund, 7 days in advance, although we are unable to cover the cost of refunding the Eventbrite fee. We reserve the right to cancel the event, with a full refund, due to any unforeseen circumstances.
What to bring
Please bring along your own aprons for the class (we have a few spare emergency aprons available!) Also bring a bag to take your creation home.
Everything else is provided. Ruth will also have her selection of products available to buy, so please bring along some extra cash so you can enjoy fermented foods while waiting for your own to be ready.

Unfortunately, we do not have disabled access at this venue, and the workshop studio location is on the second floor. We plan to hold more accessible events in the future and will announce them via our newsletter.
